Lobster Mac & Cheese- Warning, this is NOT lowfat ;)

A few weeks back some friends of mine were lucky enough to win an 11.5 lb lobster at a church meat raffle. They came back to our house to share in the wealth. ( thank you Emily & Glen) There was more lobster than we knew what to do with. I froze a bit to jazz up pasta in a few weeks but lobster mac & cheese was defintley a treat that we indulged in.

(*This recipe makes a smaller portion than in the picture, tailor for your needs)

1  cup lobster ( if you don’t have this much lobster add in what you have and cut the recipe in half, crab can also be subsituted, for full vegetarian skip the meat and add mushrooms and peas)

1 & 1/2 cup milk

2 cups cheese ( I chose cheddar)

3 tbsp butter ( yes butter)

1/2 cup bread crumbs

3 cups elbow or shell  pasta

1 tbsp flour

Step 1: Start by cooking the pasta and allowing it cool.

Step 2: In a large skillet melt the 2 tbsp butter and milk. Keep on medium heat and pour in cheese. Add in flour stir until mixture thickens.

Step 3: Add lobster and pasta. Stir. Mixture should look cheesy, if not add more cheese.

Step 4: Combine bread crumbs with remaining butter and melt.

Step 5: Pour mac & cheese mixture into large baking pan and top with bread crumbs.

Step 6: Bake for 20 mintutes until brown on 350.
