Every time I bring in spaghetti squash I get the proverbial, ‘ what is that?’ Spaghetti squash is a large yellow squash then when cooked yields a spaghetti texture vegetable that can act as a phenomenal side dish.
Note one squash will yield 4-5 servings. Wash squash. Cut squash in half the long way, be careful- they are tough to cut but its worth it!
Spoon out seeds. Place cut squash inside face down in a pan with about 2 inches of water. Bake at 400 for 15 minutes. Shutoff oven and allow squash to sit for 5 minutes.
Use a fork to scoop out ‘ spaghetti.’ Drizzle with either of the following depending on your mood:
– butter and Cinnamon
– olive oil with salt and pepper.
